You can do this (e.g. to save disk space). I have never delted the old versions.
The

    make install

command  will create an apropiate symlink to the binary of the new version.

If you haven't istalled R as an RPM, the RPM database don't know that R is on the
system.
That mean you would get problems installing additional libraries (i assume you
mean this with your 'package' term). Due to
this you would get an message like 'unsolved dependies'.

Well, the tarballs of the R people are really good & (unlike several S-packages i
know) easy to install. Just unpack and run

R INSTALL LIBRARY_NAME


& everything is fine. BTW has the compilation procedure the advantage that you get
an optimized version to your system
(but i don't believe that the increase in perdormance is important-but i've never
tested ).
