Not just adding, I'd like to change what's there:

I'd like to be able to change the scale of the plot (either to zoom
in, or to make room for some new data I'm adding).

An interactive way to change the size and position of the frame around
a graph would sometimes help with developing a layout.  

Being able to replace elements in a graph would be nice, rather than
"edit source and redo".

Keeping a replayable history of the changes (or being able to
construct a replay) would be nice:  often I want to design something
interactively, then re-use the design programmatically.
