"Minitab/Excel-like" point-and-click. However, as part of the StatDocs
project, we are piecing together components that could be directly
used to create such an environment. We are also explicitly exploring
ways of marrying the GUI-style with more comprehensive, reproducbile
analyses that an instructor and student can share, discuss, modify,
etc. So, many of the topics that have been discussed in this
interesting thread may well be realized. 

There is a commercial stats package called NCSS that has a solution to the reproducability problem that is both simple and elegant.
There is a special tabbed dialog for each type of operation (test or whatever), which allows to pick variables, enter formulae,
set options, etc. One of the tabs is called 'Templates', and allows to store the current configuration under a given name; it
is also always stored as the current configuration. Thus, one can easily repeat a test with different data, and/or store it for later.
For help and documentation, a part of the dialog serves as a permanent "tooltip" showing extensive information on the function of 
the widget that has the focus. The output goes to a simple wordprocessor that can save it as rtf. (They provide a free 30-day evaluation version.)
