I haven't tried it, but a potentially interesting combination is

 R + Emacs + ESS + Emacspeak <URL:http://emacspeak.sourceforge.net/>

Emacspeak even includes a file called emacspeak-ess.el whose purpose is
to "Speech-enable ESS: Emacs Speaks Statistics".
